(Raleigh, N.C.) March 4, 2010— Caribbean Night will be held on March 9, 2010, from 5:00pm to 8:30pm at Fountain and Clark dining halls. Students and other patrons will be treated to an array of Caribbean dishes while listening to a live steel-drum band.
“Spring Break is around the corner, so we thought this would be a great way to get them ready for a relaxed state of mind,” said Jennifer Gilmore, marketing manager for University Dining.
The menu will include a Caribbean Pork Wrap Station, Jerk Chicken, Grilled Tuna with Mango Pineapple Relish, Carved Caribbean Jerk Steak, Rice and Beans, Okra and Tomatoes, Corn, Black Bean Soup and Sweet Potato Soup. Desserts will include, Rum Cake, Fruit Salad, Key Lime Pie, Pineapple Upside-Down Cake; as well as Howling Cow Pina Colada soft-serve ice cream compliments of the NC State Dairy.
